Title: Apple Juice with Mint

Yield: 4 Servings

8 Juicy apples
4tbLemon juice
2tbMint; chopped

Cut the unpeeled apples into quarters; do not core. Put through a juice extractor. Mix with lemon juice and stir in the mint. Serve immediately. Makes 4 small glasses.

GREG'S NOTE: Not having a juice extractor, I would puree the apples in the blender, then press the pulp through a fine sieve.
